SALBIS researchers explore dysphagia through the ‘Journey into the World of Textures’ activity
On Friday 25 September, researchers from the SALBIS Research Group, Gema Serrano Gemes, Néstor Serrano Fuentes and Natalia Calvo Ayuso, took part in the European Researchers’ Night with the outreach activity ‘Journey into the World of Textures’, held in the cafeteria of the Ponferrada Campus of the University of León from 6:00 to 8:00 p.m.
The activity aimed to raise public awareness of the importance of food texture for people living with dysphagia. Through a sensory-based experience, Gema Serrano Gemes, Néstor Serrano Fuentes and Natalia Calvo Ayuso, researchers from the SALBIS Research Group working in the fields of health and nutrition, invited participants to explore how different textures can transform the experience of eating and to gain a better understanding of the difficulties that people with dysphagia may encounter while eating. Under the motto ‘There are realities we can only truly understand when we dare to experience them’, the activity approached science communication from a participatory and experiential perspective.
The participation of SALBIS researchers in the European Researchers’ Night contributes to strengthening the dissemination and transfer of scientific knowledge, bringing research in the fields of health and nutrition closer to society and highlighting the interdisciplinary nature of the group.
